3 I Can't Believe It's Vegan! Dessert Recipes

Vegan baking is always a challenge - with two "essential" ingredients for most batters on the no-no list (dairy + eggs), finding delicious and healthy substitutes is a must! While there are all kinds of non-dairy alternatives these days, finding an egg replacer can be quite the challenge. First of all, you have to consider what the egg is actually doing in the recipe -- is it just a binder? Is it a fluffing agent? Does it form the custard? Based on its essential role(s), you can select an appropriate egg replacer. One of my favorite choices lately has been Chia seeds -- packed with protein, fiber and other essential vitamins and minerals, they can be used just like flax seeds for added nutritional value or thickened into a jelly-like consistency to act as a super healthy egg substitute! Here are 3 of my most recent dessert obsessions that are vegan and allergy friendly! Happy baking! =)

With a deliciou soy creme and easily made in your toaster oven (!) this dessert is dressed to impress and will leave all of your guests wondering if it's actually vegan or not!
