Coconut Flour Flax Bread for Wheatless Wednesday

I have to admit that since going gluten free, I rarely eat bread, pasta, and baked goods. Every once in a while, I'll come across a nutrient dense bread, and I'll give it a go. This coconut flour version uses a generous amount of flax seeds, coconut oil, and eggs. Thanks to the healthy fat and protein, this bread won't wreak havoc on your blood sugar levels.

Coconut Flour Flax Bread

1/2 cup coconut flour, sifted
1/2 cup flax seeds, ground
1 /2 tsp Himalayan salt
1 tsp aluminum-free baking soda
5 organic eggs
1/4 cup coconut oil, melted
1/8 cup filtered water
1 tsp apple cider vinegar

Are you gluten intolerant are do you choose not to eat it. I ask because I'm wondering what the health benefits are of cutting it out of my diet.

By cutting gluten out of my diet my chronic joint/back pain disappeared and my brain began to work much better. My immune system is stronger and I just feel better. I may be officially intolerant, but I didn't need testing to convince me. Once I felt so much better, that was enough. Gluten intolerance is linked to just about every kind of inflammation, autoimmune disease, fatigue, headaches, allergies, and so on. Cut it out and see what happens.
