Sweet Potato Fries - Hot and Sweet

We love sweet potatoes, whether baked, mashed or roasted they always taste great. Last night we were making steak for dinner and I was craving french fries. Having found a few sweet potatoes in the pantry, I figured I could make Sweet Potato Fries.
I went to the Food Network website and started looking through recipes. Some were a little bland, others calling for frying in oil. I didn't have much time so it became a combination of recipes, a little bit of Emeril, a little bit of Giada.
I decided to peel and cut two sweet potatoes into slices a little bit thinner than steak fries. I drizzled two tablespoons of canola oil onto the slices and tossed them well. I placed them on cookie sheets and salt and peppered one side. I placed them into a 400 degree oven and let them cook for 20 minutes. I turned the potatoes and allowed them to cook for an additional 20 minutes. I took them out when they started getting golden brown around the edges.
While they were baking I mixed together:
2 tablespoons of brown sugar
1 teaspoon of kosher salt
1/2 teaspoon of cayenne pepper
When I took them out, I sprinkled them with the sugar mixture. They were delicious, a little bit of sweetness with cayenne heat. Everyone enjoyed them, picking at them before the steak was ready. I decided that the next time I bake, roast or fry sweet potatoes, I'm going to sprinkle them with this mixture...hot and sweet, just the way we like them!

Yum!! I'm not a fan of plain sweet potatoes, but I love sweet potato fries!!
