I love a good leftover recipe and this ham and spinach quiche is a quick and easy meal that can be made from leftover Christmas ham. A quiche is a savory custard pie, usually flavored with cheese, meat and vegetables. While this recipe is centered around ham and spinach, it is extremely versatile and can be altered based on what you have remaining from your Christmas dinner. Ham and Spinach Quiche
Ingredients:
1 refrigerated pie crust
1 1/2 cups whole milk
1/2 cup heavy cream
4 eggs
1/2 cup grated Parmesan cheese
1 (10 ounce) package frozen spinach, thawed and drained (leftover creamed spinach, Swiss chard or kale would work here too)
1 cup cubed cooked ham
8 ounces shredded sharp Cheddar cheese
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black
Directions:
Step 1: Arrange the pie crust in a pie plate. Bake according to package directions.
Step 2: Preheat the oven to 375 degrees Fahrenheit
Step 3: In a large bowl, whisk eggs, cream, milk and parmesan cheese. Add spinach, cheddar cheese and chopped ham and mix until well combined. Season with salt and pepper.
Step 4: Pour into a prepared pie crust and bake for 45 to 50 minutes until eggs are set and top is golden brown
*This quiche can be made with leftover sausage or turkey too!
