Skip the French fries this week and try panko-crusted eggplant fries instead from Oh My Veggies. Strips of summer eggplant are dipped into egg wash before being coated in Japanese bread crumbs, otherwise known as panko, and baked. If you prefer to make this recipe vegan, you can substitute the eggs for ground flax seeds mixed with water. Serve these healthy fries with a sweet curried cashew aioli for dipping.
