This gluten-free pasta salad from The Healthy Apple is a quick and easy lunch. Gluten-free pasta is tossed in a yogurt dressing that has been flavored with orange zest and fresh cilantro. If you want to make this pasta salad a little more hearty, add strips of grilled chicken breast. This dish travels well and is perfect for the busy person.
Ingredients:
Cook pasta according to package directions. Drain and set aside to cool for 10 minutes.
In a large bowl, combine all ingredients; gently toss to combine.
Transfer pasta salad to four serving bowls.
Serve chilled.
