A juicy roasted chicken is the perfect way to start the week. The leftovers can be put in salads, sandwiches, and soup for lunch. The best part is when you're done enjoying the roast, you can toss it in a pot and make stock for a flavorful soup. Ideally, use a local pasture raised chicken.
