I never thought I would say this, but I am so incredibly grateful to have been saddled with this diet! Tonight I learned how to make tomato sauce - from vine to plate. I searched through no less than a dozen "homemade tomato sauce" recipes that all started out with canned tomatoes (admittedly, San Marzano tomatoes are in a class all their own) but because most canned diced tomatoes contain salt, and even the no-salt variety are still high in sodium, I opted to start from scratch - on the vine. I found a fantastic recipe and learned how to blanch and core tomatoes to produce the single BEST tomato sauce ever. That's right, ever.
Breakfast
1 cup Cream of Buckwheat cereal with raisins and maple syrup
Lunch
1 banana with 1/4 c Adam's Unsalted Peanut Butter
I woke up super late today and ended up eating breakfast pretty late and skipping lunch - healthy snack instead!
Dinner
Best Ever Tomato Sauce with Ground Beef over Spaghetti

Hi Kelsey!
Great to see a fellow RAI patient blogging about the diet. I too find this process to be somewhat 'fun'.
I'm not sure if you have this brand by you, but POMI makes a great strained tomato (in a box, not a can-as some cans have iodine). That's it, nothing else in that box. It's great for later on in the diet when you may not have the energy to put as much effort into cooking!
