Variegate pink lemons are a rare type of mutant lemon that was originally found on an ordinary Eureka lemon tree in 1930.

Physical Description
The immature fruit has a green and white striped peel but as it matures it loses its stripes and develops pink flesh. The pink pigmented flesh is due to the presence of lycopene, which also colors pink grapefruits. In fact, the center of a mature variegated pink lemon looks quite similar to a pink grapefruit.
