Hold Onto Your Horses; It's A Homemade Thin Mint Recipe

Do you like girl scout cookies? Of course you do, let's not be silly here. Almost everyone loves at least one of the many varieties of cookie dished out by those adorable little wallet-cleaners.

But now, you don't have to dish out a huge amount of cash to get your fix of cookie goodness (so long as said cookie of choice is thin mints of course).

This recipe is not only almost 100% spot-on to the original, but it's also freezer safe! Make a million of 'em! Stuff your freezers full and dole them out in place of money after the inevitable robot up-rising! 

 

Ingredients:

 

1 cup (2 sticks) butter, at room temperature
 
1 cup powdered sugar
 
1 tsp vanilla extract
 
1 cup unsweetened cocoa powder
 
3/4 tsp salt
 
1 1/2 cups all-purpose flour
 
12 oz. semi-sweet bakers chocolate
 
1 1/2 tsp peppermint extract
