These salted caramel cheesecake cups from Pink Parsley are a simply addicting treat. Salted caramel is delicious with just about anything- fruit, ice cream, chocolate- but it is especially good in cheesecake. These individual cakes are perfect for parties and kids absolutely love them. Forget the cupcakes and make these salted caramel cheesecake cups instead.
Ingredients:
For the crust:
3/4 cups finely ground graham crackers (about 6 graham crackers)
1 1/2 Tbs unsalted butter, melted
1 1/2 Tbs sugar
pinch of salt
For the Cheesecakes:
16 oz cream cheese, softened to room temperature
3/4 cup sugar
1/8 tsp salt
1/2 tsp vanilla extract
3 eggs
3 Tbs salted caramel sauce, plus more for swirling (just under 1/4 cup)
