Chicken On A Stick

Preparation

Cut peppers and onion into large chunks

Slice chicken into similar size pieces

Place chicken in a bag and pour marinade over

Seal and marinade for 20 minutes

Soak skewers in water for 30 minutes

Stack vegetables and chicken onto skewers

Grill on medium high for 7 - 10 minutes, turning often

Try marinating in Italian dressing, sweet and sour sauce, soy sauce/sesame oil, and pair with complementary vegetables.
I serve these piled up on a platter of brown rice.
