Almond Macaroons

Ingredients

1 cup almonds, ground
1 tablespoon sugar (caster)

Preparation

Sift the icing sugar onto the ground almonds. In an electric mixer, beat the egg whites until half risen, add the caster sugar and beat on high for 1-2 minutes until very stiff.

Sprinkle the icing sugar and ground almonds over the egg whites and fold through gently with a spatula.

Fill a piping bag with the mixture and pipe out small, even-sized rounds,about 2cm diameter onto a baking tray lined with baking paper. Space about 2cm apart.

Bake at 190C/380F for about 10-15 minutes until golden.

Allow to cool then lift off tray.
