Ground Turkey Noodle Casserole

Ingredients

1 1/2 lbs. ground turkey
cup onion, chopped
cup green pepper, chopped
1 (15 oz.) can tomato sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1 (8 oz.) pkg. wide noodles
1 (8 oz.) pkg. lowfat cream cheese
1 cup lowfat cottage cheese
1/2 cup plain yogurt
1 tablespoon poppy seed (optional)

Preparation

Cook the ground turkey, the onion and green pepper until the meat is no longer pink. Drain fat. Stir in tomato sauce, salt and pepper. Cook the noodles; drain. In a bowl, combine the cheeses and yogurt; toss with hot noodles. Layer 3/4 of the noodle mixture in a 13 x 9 inch casserole. Spoon meat mixture on top, leaving a border of noodles showing. Top with remainder of noodle mixture, leaving a border of meat showing. Sprinkle with poppy seed (optional). Bake in 375 degree oven for 30 minutes, covered. Uncover and continue baking an additional 10 to 15 minutes. Serves 8.
