Ingredients

small mozerella balls
One can artichoke hearts
One jar sun-dried tomatoes
One jar pimento olives
package One refrigerated tortellini of choice
8 inches skewers
Marinade Ingredients:
1/4 cup Basil pesto
3 teaspoons Balsamic vinegar

Preparation

Stir together marinade ingredients in a bowl.

Thread ingredients onto skewers in the order they are listed. Brush with marinade an hour before serving.

This is a super fun, easy and delicious appetizer to make for your next party. The girls and I gobbled these up Saturday night. They are kind of like a salad-on-a-stick and great for a before-dinner little bite of a snack.

There isn’t a science to what you can put on your skewers. Simply get stuff that you love and thread it on. We made two versions of skewers for our get-together.

Caprese Salad Skewers.

Alternate cherry tomatoes, fresh mozerella, and basil leaves.

We also made Mediterannean Salad Skewers.

On these, we used the fresh mozerella again, but this time added olives, canned artichoke hearts, green pimento olives, sun-dried tomatoes and spinach cheese-stuffed tortellini. We also just switched things up and played with different combinations.

For our marinade, we started with 3 tablespoons of basil pesto. You can get store-bought or you can find my recipe for homemade here. Put this into a small bowl and also add 1-2 tablepoons balsamic vinegar. Stir it up well and that’s it. That’s your marinade.

Brush this marinade over the skewers about an hour before your party.

Set these babies out and I promise you, they’ll disappear quick!
