Sweet Potato Fries

Ingredients

3 pounds red-skinned sweet potatoes (yams), peeled, cut into ½”-wide slices, then again into ½”-wide strips
2 teaspoons chopped fresh thyme or ½ tsp. dried
2 garlic clove, minced
2 eggs, well beaten
1/2 teaspoon kosher salt & ¼ tsp black pepper

Preparation

Preheat oven to 500°F. Spray large baking sheet with vegetable oil spray.

Combine thyme, garlic, salt, pepper, breadcrumbs and half of parsley. Toss to mix.

Dip sweet potatoes into egg, shake off excess and toss in breadcrumb mixture to coat.

Spread sweet potatoes in single layer on prepared baking sheet (don’t crowd the pan). Bake until fries are tender and golden brown, turning occasionally, about 30 minutes. Transfer sweet potatoes to platter. Sprinkle with remaining parsley.
