Springtime Lemon Cream Pie
Ingredients
Filling:
1 tablespoon gelatin
pinch of salt
1/2 cup fresh squeezed lemon juice
1/4 cup water
1 teaspoon lemon zest
2 tablespoons cold unsalted butter
For Whipped Cream:
2 cups heavy cream
1/2 cup Baker’s or Confectioner’s Sugar
1 1/2 cups Graham Cracker crumbs (about 17 crackers, crushed)
6 tablespoons melted unsalted butter
