Chicken Taquitos

Ingredients
5 pounds Rotisserie Chicken, shredded
1 cup Diced Green Peppers
8 ounces Extra-Sharp Cheddar Cheese, shredded
2 tablespoons Butter
1 teaspoon Salt
1 teaspoon Pepper
medium Flour Tortillas, sized
Preparation

In a skillet, melt butter and add onions, and green peppers and cook for 10 minutes. Add shredded chicken and mix thoroughly. Remove mixture to a large bowl to let cool slightly, then add shredded cheese and mix. In a high-edged fry pan fill about half full with vegetable oil and turn heat to medium. Lay a tortilla on a flat surface and on the edge closest to you, spoon a strip of filling (as much as you'd like, but don't over-stuff so you can still easily roll it tight) in a line, then tightly roll the tortilla up and pierce all the way through with a toothpick. These taquitos were SO good! My husband loved them, and so did I. I can't wait to try different variations for the filling. MMM. This one batch can make up to 40 taquitos depending on how much filling you put in each one. Great for a crowd!
