BANANA PROTEIN MUFFINS

Ingredients

1 cup cottage cheese (low fat or fat free)
5 tablespoons carob flour or cocoa powder
1 large ripe banana (mashed)
1 fresh whole egg
3 egg whites
2 scoops protein powder (any flavor)
50 grams dried fruits (any type)
70 grams raw nuts (ground) (any nuts)
1 teaspoon baking powder
1/4 teaspoon stevia powder (optional)

Preparation

Place the dried fruits and raw nuts in a high speed blender or food processor and blend well.

Add the protein powder,baking powder,cocoa powder or carob flour and blend well again.

Beat the egg whites in a bowl with mixer until they are fluffy.

In other bowl,mix the cottage cheese with the whole egg,stevia,mashed banana.Use a mixer or hand blender to blend the mixture until it is homogenized.

Add the ground nuts and fruits to the bowl with cottage cheese while stirring.

Next is to fold in the beaten egg whites.

Mix well everything.

Preheat the oven to 180C degrees.

Spray a muffin tin or pan with some non-stick cooking spray or brush with a little bit of extra virgin olive or butter.

Divide the muffin batter into each muffin cup.

Put the muffin tin or pan in the oven and bake the muffins for about 25-30 minutes.Until they are golden brown.

After baking,remove them from the oven and set aside to chill and cool down completely before serving and eating.
