Cranberry Banana Granola
Ingredients
2 cups Gluten Free Rolled Oats
1/2 cup Walnuts
1 cup Dried Cranberries
1 tsp Cinnamon
2 tbs Honey
1/3 cup Syrup
1/3 cup Vegetable Oil
1/4 cup Dried Bananas
Preparation

Preheat over to 250 Degrees. In a small bowl, combine brown sugar, cinnamon, and salt. Set aside. In another small bowl, combine oil, syrup, and honey, stirring until well combined, about 2 minutes. Set aside. In a large bowl, add the oats. Stir in the wet and dry ingredients until combined. Stir in the walnuts. Pour onto baking sheet, spreading out with a fork. Make sure you spread it out as thin as possible. Bake for 1 1/2 hours, stirring every 15 minutes. fter it has cooked for 1 1/2 hours, take it out of the oven and add the dried cranberries and bananas. Stir them into the granola and spread it thin. Let it cool. Put it in a Ziploc bag and shake it to break it apart. Enjoy!!

My husband and I love granola. After I was diagnosed with Celiac’s, it was difficult to find gluten free granola, let alone GOOD granola. We couldn’t be picky. A few weeks ago, my husband started making gluten free granola, and let me tell you, we will never go back to store bought. One thing I love about this recipe is you can experiment and add different fruits every time. We obviously use gluten free oats, and we always check the dried fruit that we buy, because we have gotten sick from different brands. So, if you are just as sensitive, please check all your ingredients.
