Seattle Morel Mushroom and Cheddar Cheeseburgers
Serves 2
Morels are some of the most flavorful mushrooms and are abundantly available in spring. They've just started popping up at our farmers' markets here in Seattle and we're putting them in everything! The make a wonderful addition to this unctuous burger, especially when sautéed with garlic, parsley and our prized Washington Walla Walla sweet onions! If you can't find morels in your area, simply use a mixed variety of any mushroom. You can't go wrong!
1 tablespoon olive oil
1 tablespoon butter
1 clove garlic, finely chopped
1/2 Walla Walla sweet onion (or other sweet onion variety), chopped
4+ large morel mushrooms, sliced into rings
Handful of Italian flat leaf parsley, finely chopped
Kosher salt and black pepper, to taste
2 Private Selection® Steakhouse Angus Beef Patties, thawed and at room temperature
Private Selection® Vermont Extra Sharp White Cheddar, sliced
Arugula
Truffle oil, optional
2 ciabatta hamburger buns, toasted
Add olive oil and butter to a sauté pan over medium heat. Add chopped onions and garlic and cook until softened (take care to not brown the garlic). Add morel mushroom and parsley and continue to cook until mushroom are softened, about 2 minutes. Remove from heat and set aside.
Meanwhile, grill Private Selection® Steakhouse Angus Beef Patties to the doneness of your liking. Just before pulling burgers off the grill, add cheese slices and place buns on grill to toast.
Assembling the burgers:
Lightly drizzle each side of the buns with truffle oil. Place a cheeseburger on the bottom halves of bun, top with the morel mushroom/onion mixture, then finally with a small handful of arugula.
Serve immediately and enjoy!
