Porcupine Meatballs are savory little meatballs typically made with ground beef and/or ground pork which are then rolled in uncooked rice and simmered until the rice pops out. Hence, the name. This Asian-style version leaves out the rice and instead wraps the ginger and scallion-flavored pork meatballs with ramen noodles, then fried until crispy. Brilliant!
