As we head toward the end of summer, there is still plenty of time to fire up the grill and enjoy picnics and potlucks.
Many homemade veggie burgers don't do so well on the grill, but you can still enjoy eating a burger with your omnivore friends and family. To make any veggie burger more grill-worthy, fry it in a pan for a few minutes on each side.
You can also enjoy this recipe as is. Don't be surprised if some of the meat-eaters in your life will enjoy this one, it's nice and hearty.
Red Lentil and Quinoa Veggie Burgers
2 garlic cloves, minced
1/2 cup pumpkin seeds
1/2 cup cilantro, roughly chopped
1/2 cup red onion, diced
1/2 cup cooked red lentils
2 cups cooked red quinoa (black or white work too)
gluten free bread crumbs or organic corn meal
1 egg, beaten
coconut oil, ghee, or butter, for cooking
