I decided to take my buffalo obsession and put it in a wrap. I lightened the dish up a bit by baking the chicken tenders versus deep frying them. The chicken is just as crispy thanks to my panko breadcrumbs.

These vegan enchiladas are simply delicious. My husband asks me to make these enchiladas at least once every couple of weeks. The best part is that you can reheat left overs very easily and they taste just as amazing as the day they were cooked.
