Bonito (Skipjack) "Calabrese Way

Ingredients

4 Serves
700 grams A piece of bonito (skipjack) of
1 celery stalk
3 cloves of garlic
1 bunch parsley
Pepper to taste

Preparation

In a big pot put the water, carrot, onion, celery, 1 clove garlic, wine, vinegar and a handful of coarse salt .

When it starts to boil lower the heat and immerse the bonito (skipjack) let it simmer for 20 minutes covered pot .

Let cool the piece of bonito (skipjack) in its liquid, then past this time peel bonito (skipjack) in a small pieces.

Mince the parsley with 2 cloves of garlic. Put the bonito (skipjack) in a large bowl and season with chopped parsley and garlic, chilli, olive oil and salt to taste.
