1/4 cup each: non-hydrogenated margarine (melted) and organic sugar (or 3/4 cup whole wheat pastry flour (or gluten-free 1 3/8 teaspoons ground cinnamon
1/2 teaspoon baking powder
Cake (dry):
2 teaspoons baking powder
5 1/2 tablespoons finely chopped organic lemon zest
1/2 teaspoon sea salt
Cake (wet):
2 teaspoons vanilla extract
Lovely Lemon Icing:
2 3/4 cups organic powdered sugar
1 tablespoon plus 2 teaspoons fresh lemon juice
1/2 teaspoon plus ⅛ teaspoon vanilla extract
1/8 teaspoon sea salt

I made this recipe with gluten free flour and it came out great. It was really really delicious!
