I've been drinking a bit of Shiraz lately, and I end up with half a bottle the next day.
Any suggestions on how to use this in cooking? Something vegetable oriented would be perfect!
Classic uses for left-over red wine are boeuf bourgignon or coq au vin, but if you want something vegetarian, how about a red wine-based tomato soup? Something along the lines of a gaspacho? Otherwise, sangria is always an option!
Those are all GREAT ideas -- what about poached fruit? Add cinnamon, clove, maybe some ginger and sugar, and use to poach pears or stone fruits (peaches and plums seem the best to me). Ooh, oh, strawberries! Several fruits? ...and now I'm hungry.
You can make a Red Wine/Berry Granita. I use leftover wine in my Marinara Sauce all the time, and what about a Roasted Tomato Tart? Red Wine Poached Pears with Mascarpone is one of my all time favorite desserts! Cook it down with tomatoes and herbs to make tomato soup or thin is more and turn it into tomato sauce to use in other recipes!

Since it's summer and there are tons of delicious berries available- try making a berry sorbet (blackberries would be fantastic) with the wine.

Add some sugar, bring to a boil to reduce, and turn it into a red wine syrup. Great over berries and ice cream

Thanks for the ideas! Tomato soup would be excellent - I really love tomatoes. Desert sounds like a great option, too - I hadn't thought of that!

Ragu, tomato sauce, bolognese sauce, meets such as pot roast, bbqs are all good places to use open bottles of red wine.

You can also freeze in a zip lock bag and have it on hand for making a quick reduction
