Clean the filet and pat it dry. Rub 1 tbsp of extra virgin olive oil on the filet. Mix 2 tbsp of brown sugar, 1 tbsp Old Bay, 1 tsp salt & pepper in a small bowl and dip one side of the filet in the mixture. Place the filet into a Pyrex dish with the coated side up, turn broiler on high and set the fish 2 inches away. Watch the fish as it cooks. It should only take 8 to 10 minutes. Let the fish set for 5 minutes after removing from the broiler.
