what is the pink icing recipe which is used for totenham cake

The actaul recipe isn't published anywhere. It looks like a basic glace frosting. Both the recipes below are good basic glace recipes.

8 oz sifted icing sugar
Approx 3 tbs water
Pink food colouring

OR

1 lb. confectioners’ sugar
3/8 cup milk
3/8 cup light corn syrup
flavoring as desired

Mix together to give a runny consistency and spread over the cake. When set cut into squares.

It also say's that they originally used mulberries to get the pink color. You might try adding some mulberry juice or a similar tart berry juice (maybe even a touch of lemon juice) instead of the water or part water, part juice. This would give it a little tang and taste.

Royal Icing

225g icing sugar or granulated sugar, sifted
1 egg white
Food coloring

Method:

Beat egg white until it is stiff and frothy.
Add icing sugar, a little at a time and continue beating.
Use the icing immediately, otherwise, cover it with a damp cloth to prevent crusting. Color the icing as you wish.
