I would lightly blanch and drain them first. I'm not fond of frozen peppers. They overpower everything and get mushy. You can freeze them, but it wouldn't be my preference. For me it's more of a texture issue. I don't like soft somewhat limp veggies out of the freezer. I prefer fresh and crisp veggies.

No not in my experience when defrosted they tend to go soggy
