Huitlacoche

Huitlacoche (pronounced wee-tlah-KOH-cheh) is a fungus that grows parasitcally on corn. Many farmers consider it a pest, and thus it is commonly referred to as "corn smut." However to gourmets, particularly in Mexico, it is prized for its deep, intensely earthy flavor. At its peak, huitlacoche is as intensely flavored as black truffles, but decidedly more musty and somewhat less refined.

Huitlacoche is commonly used in fillings for burritos or tamales. It also pairs well with eggs, either in a scramble or as an omelette filling.
