Make no bones about it, bone broth is a huge trend right now and for good reason. It’s economical (simply simmer your leftover bones and veggie scraps), it’s good for you (studies show that chicken soup does actually help a cold!), and on a chilly day it warms you up from the inside out. Our grandmothers made bone broth (or stock or broth depending on who you're talking to) not because of a food trend, but because they were excellent home and kitchen economizers.
Fortunately this "old-school" way of cooking has returned and we're seeing a bevy of broths beyond the traditional chicken, turkey and beef like Thai-style broths with a splash of fish sauce and lime juice, fish broth with lemongrass, beef broth with exotic spices from far off lands. Sometimes these broths are used as the base in a recipe, but more often than not they are used simply as a sipping broth.
During these cold autumn months, and as we head into the even colder months of winter, it's a wonderful thing to have a savory something to sip on, but you don't have to spend hours in the kitchen simmering a huge pot of bones. Start with a good quality store-bought stock, add your favorite combination of ingredients, and let it simmer 5-10 minutes to allow the flavors to meld. Ginger Shiitake Sipping Stock

Makes a single serving
Ingredients:
3/4 cup Progress Chicken Stock
1/2 teaspoon fresh ginger, minced (or more if you like more zip in your broth!)
1/2 cup shiitake mushrooms, cleaned, stemmed and diced
1/4 teaspoon soy sauce or tamari sauce if gluten-free
Instructions:
Combine all ingredients in a saucepan and bring to a simmer over high heat. Reduce heat to low and simmer 5 minutes. Strain into a mug and discard solids.
