Celebrate National Ravioli Day

March 20, 2015

It a wonderful day for pasta! Today is National Ravioli Day and we couldn't be happier. So often, the sauce gets all the credit, when you know that pasta is what makes the dish special. We love ravioli. Those light, delicate pillows of homemade pasta filled with just about anything you can think of for fillings. It's a versatile dish that deserves a day of celebration. Check out this recipe for Squash Ravioli. We like browned butter sauce, but use what you love.

From Flying Fourchette

Ravioli is such a great dish. You can make a pretty fabulous meal with just a little effort and some time. Take a look at how it's done!

Finally, a simple recipe that I use to make pasta takes just a few minutes to make and it's foolproof.

Homemade Pasta
2 cups flour
1/2 teaspoon salt
eggs
2 tablespoons cold water
Preparation
1. In a food processor, add flour and salt
2. Turn on processor, and add both eggs through the chute
3. Add water and allow machine to work until a ball of dough is formed, cleaning off the sides of the bowl almost completely
4. Wrap in airtight wrapping and allow to rest for a minimum of 1 hour before rolling and cutting noodles
