Easy Chicken Dinner: Slow Cooker Pulled Chicken

On the days I know my schedule is jam packed, I pull out my favorite slow cooker recipes to help me get through the week.  The beauty of the slow cooker is that you can dump all the ingredient in a pot and forget about it while you occupy yourself with work and family.  

Slow cooker barbecued pulled chicken is easy and a total crowd pleaser.  Boneless skinless chicken thighs are cooked low and slow with a tangy homemade barbecue sauce that's made right in the slow cooker.  Since the chicken will be cooked at such a low temperature (and in a sauce) you don't have to worry about it drying out.  After 5 hours, the meat because tender and just melts in your mouth after each bite.

You can serve barbecued pulled chicken on it's own with your favorite barbecue sides or in bun for a pulled chicken sandwich.  I like to make a spicy cole slaw studded with fresh jalapenos and chopped cilantro to go alongside the chicken.
