How to Make Easy Citrus and Herb Roasted Chicken

Chicken is on the menu at least once a week at my house and there are a handful of recipes that my family continuously ask for.  Herb and citrus roasted chicken from Cooking with Sugar happens to be one of those.  Not only is this a dynamite weeknight meal but the leftovers can be transformed into a completely dish later on in the week.  

Whether you're roasting an entire chicken or just a specific cut, it's important to purchase it with the skin on.  Chicken has a tendency to dry out because of it's lack of fat content so the skin helps keep the meat moist.

For this recipe, chicken thighs, breasts and legs are coated in a homemade citrus marinade made with lemon juice, orange juice, garlic, and olive oil.  Instead of roasting a whole bird, the various cuts of chicken are baked on a sheet pan to help cut down on the cooking time.  The chicken pieces share the pan with other aromatics including onions, slices of oranges and lemon and springs of rosemary to add more flavor during the cooking process.

After an hour, your chicken should look golden brown and delicious.  Serve this meal with your favorite side dishes including a kale salad or petite oven roasted potatoes.
