Quick and Easy Breakfast: 1-Minute Egg

Breakfast is the most important meal of the day but during the week most of us find ourselves short on time in the morning. When you struggle to get yourself (and the kids) ready, who has time to fix a healthy, satisfying breakfast? The 1-minute microwave egg (or "puffy egg" as we call it) is my go-to breakfast when I'm running against the clock. Simply give a microwave safe bowl a little spray of olive oil (or other cooking spray), beat an egg or two in it, and season with your favorite seasonings. Try a little salt and pepper and/or a pinch of dry herbs like tarragon or Italian seasoning. Pop the bowl in the microwave for 1 minute and watch as it puffs up like a beautiful soufflé! For an even healthier version use egg whites or Egg Beaters (though just whites take a few seconds longer).

For my toddler I cut up her "puffy egg" into pizza-style wedges and serve with toast and fresh fruit. You can also pop it between two pieces of toast or roll it up in a tortilla for a tasty on-the-go breakfast!

Also try your 1-minute egg with these quick additions:  
-sprinkle a little grated cheese on top before cooking
-mix in a little salsa or add on top after it's cooked
-top with a little sliced avocado and/or tomatoes
-wrap up a couple Morning Star sausage links or patties in a paper towel and pop in the microwave alongside your egg.
