Meatless Monday: Grilled Indian Spiced Tofu with Yogurt

Grilled Indian Spiced Tofu is an easy late summer meal.  Cubes of tofu are marinated in fragrant Indian spices and then grilled to perfection.  The tofu is then served in a pita with a cooling cucumber and onion yogurt sauce.  It is always better to buy whole spices and grind them up yourself, as you do in this recipe.  They are fresher and have a stronger flavor.  Most of the spices listed can be found in your local market or an Indian foods store.  So get out the grill and make this recipe grilled Indian spiced tofu for Meatless Monday.

Grilled Indian Spiced Tofu with Yogurt

Ingredients:

2 tablespoons Chopped cilantro
1 small Cucumber, peeled
1 tablespoon Coriander seeds
1 tablespoon Cumin seeds
1 tablespoon Paprika
1 small Piece ginger
3 tablespoons Yogurt
2 tablespoons Turmeric
1 tablespoon Garam masala
 
Directions:
Blitz all the spices together until finely ground in a coffee grinder. Stir in 3 tablespoons of yogurt.
 
Cut the tofu into squares 2"x2", coat with lemon juice and sprinkle with salt. Marinate in the spice mix for at least one hour. Skewer them on to bamboo skewers and set aside.
 
Finely slice the red onion and cucumber and mix together with the cilantro. Season with salt and pepper. Heat a grill pan and grill the pittas on both sides. Keep warm.
 
Fry the tofu skewers in a little groundnut oil until brown on all sides.
 
To serve, slice open the pitas, fill with some of the red onion mix, top with a tofu skewer and serve with natural yoghurt.

This recipe is great for all those who still dislike tofu. Indeed, plain tofu tastes nothing but with a little creativity, one can make tofu taste wonderful. Spiced up tofu like in your recipe is probably the best option. And spices are trendy right now since that August article about the power of spices in combating fat.
