Strawberry season is here and and the bounty is beautiful. Most people turn to strawberry shortcake, strawberry ice cream, and strawberry jam...all delicious and sweet. I also like to use strawberries in savory recipes as well as sweet. I made this salad two summers ago when experimenting with this idea. I really love the strawberry jam in the dressing because it adds sweetness and intensifies that strawberry flavor. If you want to turn this salad into a main course, a grilled piece of chicken would be lovely. I think you will be impressed by how well these flavors marry together.
Strawberry and Goat Cheese Spinach Salad
Ingredients:
Salad:
8 cups fresh baby spinach leaves
1 pint strawberries sliced
4 oz goat cheese
1/4 cup sliced toasted almonds
Dressing:
2 Tablespoons balsamic vinegar
1 Tablespoon strawberry jam (preferably seedless)
6 Tablespoons olive oil
salt and pepper to taste
