Coq au vin is a French Classic made by braising chicken in stock and red wine. The flavors stew and merry and the end result is a rich sauce and savory pieces of chicken. Traditionally, red wine from the Burgundy region of France but you can use any red wine that is good enough to drink. This recipe is as comforting as it is delicious. I would serve this with boiled new potatoes. This dish is a nice way to end the weekend.
Ingredients:
3 pounds broiler chicken - quartered
2 tablespoons oil
1 tablespoon chopped onion
1 tablespoon flour
½ cup red wine
½ clear chicken broth
1 garlic clove - crushed
1 bay leaf
¼ teaspoon thyme
12 small white onions
1 cup sliced mushrooms
1 pound bacon
