This delicious and easy to prepare recipe has the taste and feel of couscous, but is completely grain-free. Use purple or yellow cauliflower for a colorful dish packed with antioxidants.
Cauliflower "couscous" with mint-basil sauce
SAUCE
¼ cup mint leaves
¾ cup loosely packed fresh basil leaves
2 lemons, juiced and zested
½ cup olive oil
2 tsp maple syrup
CAULIFLOWER
2 Tbsp grape seed oil
1 medium red onion
2 medium heads cauliflower, florets finely diced
¼ cup fresh basil. sliced into very thin strips
Himalayan or sea salt and pepper to taste
Directions: Combine the mint, basil, lemon zest and juice, oil, and maple syrup in a blender. Puree and set aside. Next, add the oil to a wide pan over medium heat. Then add the onion and sauté until the onion softens, about 5 minutes. Add the cauliflower, stir thoroughly, salt and pepper liberally, and cook for about 15 minutes. Add ¼ cup of sauce and cook for another 10 minutes until tender. Adjust the salt and add the remaining ¼ cup of sauce. Mix well and transfer to a serving platter. Top with the basil strips.
