Pastis

Pastis, one of the most popular beverages in France, is an anise flavored liquor, usually used as an aperitif. It is available as an alcoholic (45%% alcohol) and (occasionally) a non-alcoholic beverage.

Pastis first appeared about 17 years after absinthe was banned - though its flavor is similar, its alcohol content is far lower. It also doesn't contain wormwood and gets its anise flavor from the distillation of star anise rather than green anise.

Pastis is generally mixed with water before drinking. With the addition of water, the alcohol turns from clear yellow to soft milky yellow. Ice may be added as well.
