Physical Description
The United States dairy product known as half and half is a mixture of one part milk to one part cream. According to United States federal standards, Half-and-half is the food consisting of a mixture of milk and cream which contains not less than 10.5 percent but less than 18 percent milkfat. It is pasteurized or ultra-pasteurized, and may be homogenized. By comparison, "heavy cream" has not less than 36 percent milk fat, and light cream is between 18 and 30 percent milk fat.
