MInt Peas

Ingredients

1 1/2 cup frozen peas
3 tablespoons unsalted butter, softened at room temperature
1 tablespoon fresh mint, finely chopped
1 tablespoon lemon zest

Preparation

In a small saucepan add the peas and ½ cup water. Bring to a boil and cook until tender.

Meanwhile in a small bowl mix the butter, mint and lemon zest.

Drain the peas and place them in a serving bowl. Add the mint lemon butter to them and mix well. Serve hot
.

About

Having peas while growing up, was a standard side dish in my family. I enjoy them in all aspects of my cooking and with most dishes that I prepare. They give that extra sweet touch to it. Love them. Of course, always prepared the same way: butter, lots of it, salt and pepper.  Today I will not bore you with the basic recipe, but adding a twist to it. Mint and Lemon.

Lemon is ranking pretty high on my list of favorite, and when you have friends that bring you fresh lemons just picked from their tree, I am in heaven. Place them in the refrigerator, they last a long time.

Mint is an herb that I enjoy with my Mojito and a couple of other dishes.  Adding it to the peas it gives it a tiny bite and refreshing taste as well as the lemon zest. The best part: Ready in less than 15 minutes.
