Chinese Shredded Chicken Salad
Ingredients
3 cooked chicken breasts
2 slices cooked thin sliced ham (optional)
2 ounces Mai Fun noodles
1 sm. head lettuce
2 tablespoons sweetened red ginger
2 stalks green onion
1 tablespoon toasted sesame seeds
4 tablespoons sugar
2 teaspoons salt
1 teaspoon white pepper
1/2 cup oil
2 tablespoons sesame oil
1/2 cup cider or white vinegar
4 tablespoons prepared Chinese mustard

Noodles-also called rice vermicelli or rice sticks MUST BE RICE.

Ginger-found in syrup at Chinese markets.

Sesame seeds-350 degrees for 5-7 minutes.

Finely hand shred the cooked chicken. Place in refrigerator. Cut all vegetables into fine strips (about matchstick in size). Toss all ingredients and dressing, except noodles, together just before serving. Noodles or rice sticks must be deep fried, cooled completely, and crushed to sprinkle on salad.

Can use Coleman's hot mustard and add water until it pours.
