HAM AND CHEESE POCKETS 

"This recipe is a low-carb twist on a childhood favorite frozen convenience meal. While it requires a little more prep time, it’s definitely worth it. These Ham and Cheese Pockets are great for kids because they’re handheld and full of cheese, and they have a crispy crust and warm, gooey center!" ~ Sam Dillard

Prep time 10 minutes | Cook time 20 minutes | Serves 4 

1½ cups shredded mozzarella
2 ounces cream cheese, softened
1 cup finely ground blanched almond flour
1 tablespoon coconut flour
1 teaspoon baking soda
¼ teaspoon apple cider vinegar
1 large egg
4 ounces cooked ham, chopped into cubes
4 ounces sharp Cheddar, shredded
4 teaspoons Dijon mustard
¼ teaspoon poppy seeds 

Preheat the oven to 400°F. Line a large baking sheet with parchment paper. 

In a large microwave-safe bowl, add mozzarella, cream cheese, almond flour, and coconut flour. Microwave for 45 seconds, then stir. Microwave for an additional 15 seconds and stir until a smooth ball forms. 

Add baking soda, vinegar, and egg. Stir until combined and a soft ball forms. Separate the dough into four pieces and flatten into 4" × 6" rectangles. Wet your hands with a bit of water to prevent the dough from sticking to your hands as you work, repeating as needed. 

On one half of each piece of dough, place 1 ounce ham and 1 ounce Cheddar. Fold the other half of the dough over and press to seal it closed. 

Brush 1 teaspoon mustard over each pocket and sprinkle with poppy seeds and place onto prepared baking sheet. 

Bake for 15 minutes or until golden brown. Let cool for 10 minutes before serving.

Change Up the Fillings 

You can switch up the filling for these pockets however you or your family would like. This cheesy dough can be used with your favorite chopped-up fillings, such as taco meat, turkey, and Cheddar, or even pepperoni! It also makes a great mini calzone—brush the outside with garlic butter and sprinkle with Parmesan before you cook it.
