Grilled Rocky Road Banana Splits

Grilled rocky road banana splits are a fun way to reinvent this classic dessert.  Bananas are sliced lengthwise and stuffed with marshmallows, chocolate chips and peanuts before they hit the grill.  The heat intensifies the banana flavor while also warming the other ingredients.  A scoop of vanilla ice cream provide a contrast in flavor and temperature.  Feel free to play around with this recipe and include your favorite toppings.  I like to create a tropical version with toasted coconut, macadamia nuts, and white chocolate chips, served with pineapple ice cream.

Grilled Rocky Road Banana Splits

Ingredients:

4 to 6 large bananas
1/2 cup semisweet chocolate chips
1/2 cup mini marshmallows
1/4 cup chopped salted peanuts
vanilla ice cream
maraschino cherries

Directions:

Step 1: Cut each banana lengthwise (with the peel on) about a 1/2 inch deep, leaving a 1/2 uncut on each end of the banana.

Step 2: Place each banana on a sheet of heavy-duty aluminum foil. Crimp and shape foil around banana so it creates a base for the bananas to sit flat.

Step 3: Fill the slits with the chocolate chips, mini marshmallows and peanuts.

Step 4: Grill bananas for around 5 minutes or until chocolate has melted and marshmallows turn golden brown.

Step 5: Serve with a scoop of vanilla ice cream and a cherry on top.
