Gluten-Free Oven Baked Fish and Chips

Fish and chips are a comfort food classic but can sometimes be on the heavy side.  Gluten-free oven baked fish and chips are not healthy but are a great recipe for people who practice a wheat free diet.  In my personal experience, I have found that when baking anything with a crust whether it be chicken, fish or even zucchini, you must start with a hot pan.  This means leaving the baking tray in the oven while it preheats.  While this technique is a little more daring, it helps crisp the bottom crust so that it does not become soggy during baking.  Serve these awesome fish and chips with your favorite homemade tartar sauce and malt vinegar.

Gluten-Free Oven Baked Fish and Chips

Ingredients:

For the Chips:
1 large potato cut into 12 wedges
1 tablespoon olive oil
a heavy sprinkle of old bay
a little rosemary
coarse sea salt and freshly ground black pepper, to taste

For the Fish:
6 oz of tilapia fillet, cut into long strips
2/3 cup of gluten free Bisquick
1 egg
2 tablespoons milk
garlic powder
paprika
old bay seasoning
kosher salt and freshly ground black pepper, to taste
Olive oil, to drizzle on top
