Meatless Monday Recipe: Mexican Chopped Salad

Mexican chopped salad from Eats Well With Others is so good, you won't even miss the meat.  A bed of greens is piled high with corn, black beans, queso fresco and avocado.  Tortilla strips are added to give each bite a distinct crunch.  You can buy your favorite dressing to drizzle over the top but the recipe includes a spicy yogurt dressing that's dynamite with this salad.  If you are looking for an extra boost of protein, feel free to add seared tofu flavored with taco seasoning or quinoa.  For full recipe instructions, click here.
