Pickled Walnuts

An English ingredient used in stews or mixed with butter or cream cheese as a spread.

Pickled walnuts are made by soaking full-sized, green walnuts in brine for several weeks. The walnuts are removed from the brine and allowed to dry, turning black in the process from a chemical reaction inside the walnuts. They are then returned to jars and further pickled.

English chef Fergus Henderson is a proponent of pickled walnuts as an accompaniment to his whole beast dishes.
