Strawberries With Elderflower Syrup And Cream

Ingredients

(Makes approximately 2 cups)
2 cups sugar
2 cups water
1 lemon, zested and juiced
5 1/2 cups elderflowers, plus more for garnish
1 pint strawberries

Preparation

Make Elderflower Syrup: Heat sugar, water and zest and lemon juice bring to a simmer, add elderflowers, remove from heat, steep from 1 to 3 days, strain.

Wash, de-stem and slice strawberries and add them to a mixing bowl. Pour 1 cup of elderflower syrup over the top and mix well to combine. Serve on plates with fresh whip cream and garnish with remaining elderflowers.
